I am embarrassed to say that I had never been to Caro's, owned and operated by the Whitten family for over 50 years, until this past week. I stopped in on some foodie related business and chatted with John "Puff Taco Daddy" Whitten. He mentioned that they would be testing some fish tacos later that day. Apparently I'm not great at hiding my excitement and was quickly invited to come back to help out. And who am I to say no? It would just be rude.
